Abstract: A field trial was carried out to study on starch pasting properties of wheat under irrigation and nitrogen level with three wheat varieties in Shaanxi Guanzhong area. The results showed that starch pasting properties of wheat was affected by irrigation and different nitrogen level. There had no effect under different nitrogen methods. With irrigation in winter and spring mode, peak viscosity was significantly higher than the other three kinds of irrigation mode. Along with the increase of the fertilizer rates, hold through, final viscosity and setback were on the rise. Starch quality of Xiaoyan 22 was the best under the optimal conditions of irrigation in winter and spring, nitrogen application of 120 kg /ha. Xinong 979 had the best starch quality he optimal conditions of no irrigation and nitrogen application of 240 kg /ha. And Shan 558 could get the best starch quality he optimal conditions of no irrigation and nitrogen application of 240 kg /ha irrigation in winter and spring, nitrogen application of 120 kg /ha.
