Effects of Different Temperatures and Modified Atmosphere Package on Chilling Injury and Physiological Changes During Storage of Eggplants

Abstract: Effects of different temperatures and modified atmosphere package (MAP) on chilling injury (CI)-induced increase of electrolyte leakage rate (ELR),respiratory rate and flesh Vc content of eggplant fruits were studied during storage. The results indicated that the fruits stored in PE bag underwent physiological disorders after 8 days, while the control(untreated) fruits showed the chilling symptom after 3 days at (2±1)℃.Followed the changes of the CI,ELR increased rapidly.MAP was effective on retarding both the CI and the increase of ELR.Otherwise,MAP can significantly inhibited respiratory rate,decrease of Vc content in stored eggplant fruits at (12±1) ℃ and at room temperature,respectively.
