Abstract: In order to study the characteristics and mechanism of fatty acid composition in yak, the fatty acids composition and content of Longissimus dorsi muscle in yak and cattle were determined by using gas chromatograph-mass spectrometer-computer(GC-MS), while the FASN gene mRNA expression level was investigated by Real-time PCR, and the correlation analysis was carried out.The results showed that the monounsaturated fatty acid(MUFA) and polyunsaturated fatty acids(PUFA) in yak was extremely significantly higher than in cattle(P< 0.01), while the saturated fatty acid(SFA) was significantly lower than in cattle(P< 0.05) .The FASN mRNA expression in yak was extremely significantly higher than in cattle(P< 0.01) .There is an extremely significant positive correlation(P< 0.01) between the FASN mRNA expression level and content of C10:0 in yak, no significant correlation(P>0.05) was found in cattle.
