Effects of 1-MCP on Fruit′s Starch and the Components of Cell-wall Material during Post-harvest of Gala Apples

Abstract: The physiology of starch degradation and the changes of components of fruit cell wall in relation to ripening and softening were investigated using Gala (early maturing) apples (Malus domestica Borkh. ). The fruits were harvested at mature stages, and treated with 1-methylcyclopropene (1-MCP) under room temperature (20 ± 1) e. The experiment indicated that 1-MCP had significantly reduced Gala apple fruit respiration rate, delayed the climacteric, and inhibited fruit softening. 1-MCP treatment significantly decreased starch degradation, inhibited the catabolism of fruit cell wall, delaying pectin transformat ion from insoluble to soluble. The relativity analysis showed that the firmness was significantly positively correlated with starch, CSP, cellulose and hem-i cellulose, negatively related to WSP and slightly relatedto ISP.
