Abstract: The activities of CAT and POD during drying process were studied. It was found that the seed physiological activities increased at first and decreased at last. Effects of high temperature drying process on seed vitality were investigated in laboratory. The results indicated that there was some enzymes such as CAT and POD in the seed, which protected seed from destroy. As soon as the drying temperature was higher than seed can endure, toxic metabolite such as MDA increased as enzymes were destroyed, which lead to the loss of seed vitality.
