Study on Protein Content and Amino Acid Composition of Chinese Foxtail Millet

Abstract: Determination of the protein content of 416 typical varieties of Chinese foxtail millet(Setaria italica Beauv.) indicated that the protein content in the most varieties rangs from 10% to 13.99%,av. 11.73±1.40%.The variance coefficient is 11.92% in the varieties.The protein content has no relationships with nonglutinous-glutinous property and palatability.In Chinese foxtail millet, the main composition of amino acid arc glu-tamic acid, alanine, proline and aspartic acid.The correlatiou analyses and the path analyses of protein and amino acid indicated that glutamic acid, proline and arginine arc main amindo acid in affecting on protein.
