Protein Content and Acid Composition and Qualities of Different Blue or Purple Grain Wheat

Abstract: It was compared protein content and acid composition of blue or purple grain wheat with that of white grain wheat.Qualities value of different blue or purple grain were evaluated.The results showed that comparing with white grain,Blue or purple grain wheat had higher grain protein content,and their acid type were plentiful.Their EAAS and EAAI were very high.Every EAA were plentiful and equilibrium.They had high nutritional value and grain quality.Among these varieties,Wumai 526 with blue grain had best grain quality.
