A Study on the Contents of Mineral Elements in Rape, Amaranth, and Celery

Abstract: Ten elements,namely K, Na, Ca, Mg,P,Fe,Mn,Cu,Zn and Sr, included in edible amaranth, oilnavew bird rape and celery were detected by ICPS-1000 II plasma spectrophotometer. The correlation between concertration and intensity of the standard curve was all linear Cr = 0.999) .Among the 3 vegetables, Fe content in amaranth was the highest. Among the 5 amaranth cultivars, Tong Dong Hong not only had the highest content of Fe,but relatively higher levels of Cu, Zn, Ca, and Mg also. In addition, it was found that the total content of Cu + Zn + Mn in a rape cultivar, Xu Zhou Tai Cai was much higher than those in the other cultivars. This rape cultivar also had higher Zn/Cu and Mn/Cu nation.
