Abstract: Results of the study indicated that for the American grainamaranih grown in Taiyuan arca, protcin content ranged betwecn17.00-19.6% with an average of 18.02±1.054%.Its variation coefficent was 5.8%.The total amount of 18 ammo acids was 5885.62mg/gN.The tolal content of the essential amino acids is 37.9%,in which glutamic acid, being the highest in content, consisted 18,4%of the total amount. The average fat content was 7.0±0,74%.Linoleic acid accounted for 81.3%of the unsaturated fatty acid.Amino acid scores, chemical scores and essential ammo acid indexes were calculated for amaranth edible oil, so as to ascertain and compared with the nutriti ve value those in food grain and of grain amaranth.
