Accumulation Pattern of Selenium in Sa-sprouts

Abstract: The studies on the growth of Se-sprouts were conducted.Results indicated that the optimum concentration of Na2SeO3 was 1-20ppm.Selenium accumulation in the sprouts showed a significant linear correlation with different concentrations of Na2SeO3 in this range.The recession equations were: (1)Y=-0.1193+0.9272X,r=0.9886 for mungbean sprouts;(2)Y=2.5015+3.6637X,r=0.9831 for alfalfa sprouts.No difference was found in the sensory quality between the sprouts without fortified Se and the Se-sprouts.Widely grown and supplied year round, Se-sprouts could be considered a new way to sup plying selenium.
