Non-destructive Evaluation of the Nutritional Composition of Cucumber

Abstract: A non-destructive analytical method for vitamin C,reductive sugars and dry matter in cucumber was developed using near infrared spectrometry(NIR). Compared with the national standard methods,this method shows similar precision:the results for these three components obtained with the two methods have mufti-correlation coefficients of 0.9932,0.9930 and 0.9816 respectively,with standard errors of 0.368 mg/100g,0.068%and 0.085%correspondingly. But NIRs method is hundreds of times more efficient. Moreover,the advantages such as no need for pretreatment,no use of chemical reagents and no damage to used samples make NIRs a quick analytical method for large quantities of samples and a convenient resort in breeding as well as in nutrifional evaluation of genetic plasmas of cucumber.
