Abstract: With phytate-Ca as the sole phosphorus source of selected medium,a extracellular phytase-producing strain was screened from the ficuum.Liquid fermentation was studied and a best fermentation medium was obtained, starch 8%,glucose 2%,NaNO3 1.0%,KH2PO4 0.01%,KCl 0.05%,MgSO4 0.05%,FeSO4 0.01% and initial pH 5.0.Inoculating amount 10%,filling liquid volume 10%,extracellular phytase production as much as 870.87 pu/mL fermentation liquid was obtained at 30℃ after 8 days.More 75% phytic acid of soybean was decomposed by the fermenting liquid at 30℃ for 90 min,and soluble protein content in treating liquid was increased from 0.167 mg/mL to 12.1 mg/mL.
