Abstract: In order to discuss the effect of ozone treatment on index of physiology and biochemistry of mopan persim-mon during storage, the experiments were made by three treatments:(0±0.5)℃ cold storage;(0±0.5)℃cold storage+0.85μL/L ozone treatment with 9 min every 3d;(0±0.5)℃cold storage+1.88μL/L ozone treatment with 3 min every 3 days. The results showed that compared with(0±0.5)℃cold storage, both 0.85μL/L ozone+cold storage and 1.88μL/L ozone+cold storage could restrain respiration rate and PPO and POD activity, and declined flesh firmness and content of soluble tannin markedly. At the same time, the treatment of low-concentration and long-time had remarkable effect on restraining maturation and senescence of postharvestmopanpersim-mon,compared with the treatment of high-concentration and short-time.
