Abstract: Studies on chilling injury to fruits and vegetables during cold storage and transportation were mostly made under the condition of constant temperature storage before. The physiological response of cold-stored Sweet peppers to intermittent warming was studied in this paper. The results indicated that the intermittent warming could retard the chilling injury to sweet pepper. Therefore, this kind of method could save energy resources in cold storage and transportation. The effectiveness of intermittent warming in cold storage and the influencing factors were also analyzed.
