Abstract: Low temperature inhibited the activities of post harvest asparaguss respiration and metabolism, that could cause fibres increase slow and Vc reduction less. Darkness enhanced the respiratory intensity, but the quantity of fibres did not increase. Light can induce the increase of fibres. High concentration CO2 and low O2 have the action of inhibiting the increase of metabolic activity. The asparagus can keep fresh for a week, when it is stored at 18±1℃ and under high CO2 and low O2 conditions.
