摘要: 本文分析了382个栽培稻品种(含早籼、粳稻和陆稻)糙米蛋白质含量和氨基酸组成,结果表明,栽培稻品种糙米蛋白质含量(N×5.95)变幅为7.01至17.86%,平均值为10.48%;籼型品种蛋白质含量高于粳稻;同一品种在不同环境条件下糙米蛋白质含量有所波动;污水灌溉可以增加蛋白质含量;品种糙米蛋白质含量与其生育期和粒重呈负相关;高蛋白品种含有的赖氨酸和苏氨酸都较少,两者都是限制性氨基酸.

Abstract: This paper analysed the grain protein content and amino acid composition of 382 cultivated rice varieties including Hsien (Indica), Keng type (Japonica) rice and upland rice. The results were as follows;The protein content (N×5.95) of rice cultivars ranged from 7.01 to 17.86% and the average value was 10.48%. The protein average content of Hsien rice varieties was higher than that of Keng rice growing under the same conditions.The protein content in brown rice of the same variety varied grown under different enviromental conditions. The result also indicated that protein content of rice was increased by sewage water irrigation.The correlations between the protein content of varieties and growth duration as well as grain weights were negative.All protein varieties contained comparatively less limiting amino acids. In general, lysine and threonine were found to be the first and second nutritionally limiting amino acids.
