The Comparison of Antioxidant Activity of Four Natural Pigments from Folium Perilliae

Abstract: In this study, folium perilliae, purple cabbage, black rice and purple sweet potato were studied to assess their antioxidant activity by different analytical methods: total reducing activity, inhibitory effect on lipid peroxidation, free radical-scavenging activity on DPPH and superoxide anion radical. The results showed that they had reducing capacity. According to the test concentration, the maximum scavenging rate on the peroxidation of linoleic acid was 24.56%, 33.04%, 45.61%, 54.39%; the maximum scavenging rate on DPPH was 92.59%, 93.2%, 78.4%, 66.29%; the maximum inhibition rate on superoxide anion radical was 46.85%, 57.69%, 41.2%, 65.08%. They were natural, excellent, edible and strong antioxidative pigment.
