摘要: 研究了发酵床养殖模式对猪臀肌中MSTN基因表达量影响及其与肉品质间的相关性,旨在描述不同饲养环境对调控肌肉发育相关基因表达量的差异。在常规水泥地面饲养与发酵床饲养模式下,MSTN mRNA基因相对表达量并未出现显著性差异(P>0.05),但与常规饲养相比,发酵床猪臀肌中MSTN mRNA基因相对表达量低8.6%;常规水泥地面饲养模式下臀肌中MSTN mRNA表达量与剪切力显著负相关(P<0.05);发酵床养殖模式下臀肌中MSTN mRNA表达量与水分含量及其肌纤维直径显著负相关(P<0.05)。2种模式下猪臀肌中MSTNmRNA表达量与猪肉其他品质间的相关性无显著差异(P>0.05)。

Abstract: In order to determine the effect of microorganism fermentation bed on expression of MSTN and its expression correlation with pork quality , and to describe the differences gene expression in the different breeding environment. The results:there were no significant difference on the expression of MSTN between conventional breeding environment and microorganism fermentation bed (P>0. 05 );the expression of MSTN in the microorganism fermentation bed is lower 8. 6% than conventional breeding environment in the conventional breeding environment there was significant negative correlation between expression of MSTN and shear force (P<0. 05);in the microorganism fermentation bed, there was significant negative correlation among the expression of MSTN,water content and fiber diameter;there were no significant difference on the expression of MSTN between conventional breeding environment and microorganism fermentation bed (P>0. 05) on the other meat quality index.
