蓝、紫粒小麦蛋白质含量、氨基酸组成及其品质评价

Protein Content and Acid Composition and Qualities of Different Blue or Purple Grain Wheat

摘要: 比较了蓝粒、紫粒小麦和白粒小麦子粒中蛋白质的含量、氨基酸的组成,并对其品质进行评价。结果表明,与白粒小麦相比,蓝粒小麦和紫粒小麦的子粒中蛋白质含量高;其蛋白质中各种氨基酸种类丰富;尤其是必需氨基酸不仅含量多,而且评分及指数均较高,组成比较平衡,营养价值高,子粒品质好。其中以蓝粒小麦乌麦526品质最好。

Abstract: It was compared protein content and acid composition of blue or purple grain wheat with that of white grain wheat.Qualities value of different blue or purple grain were evaluated.The results showed that comparing with white grain,Blue or purple grain wheat had higher grain protein content,and their acid type were plentiful.Their EAAS and EAAI were very high.Every EAA were plentiful and equilibrium.They had high nutritional value and grain quality.Among these varieties,Wumai 526 with blue grain had best grain quality.
